The Essence of Tsunan Brewery
Located in Niigata Prefecture’s Tsunan Town, renowned for its heavy snowfall, Tsunan Brewery utilizes natural spring water sourced from mountains over 2,000 meters high. The brewery has garnered significant attention, winning the Niigata Governor’s Award for first place at the 2025 Echigo Liquor Brewing Technology Championship. By preserving traditional techniques while integrating AI in brewing data analysis, Tsunan Brewery is evolving into a “bio-brewing company,” advancing its craftsmanship into the future.

A Unique Approach to Sake
The event will feature a discussion on the global potential of sake crafted with locally sourced Koshihikari rice, which is generally considered unsuitable for brewing. Through advanced soaking management and low-temperature fermentation techniques, Tsunan Brewery has transformed this table rice into a transparent and fragrant Junmai Daiginjo. Attendees will gain insights into how this innovative approach can connect with global food cultures and create exciting culinary experiences.
