Despite its excellent nutritional profile and delightful texture, the consumption of dried Kikuage mushrooms in homes often falls short. In a recent survey conducted in May 2025 by the Japan Mushroom Center among women in their 30s to 40s residing in Tottori, nearly 80% indicated they do not use Kikuage in their everyday cooking, primarily due to unfamiliarity.

To foster greater familiarity, the Japan Mushroom Center aims to introduce Kikuage in accessible and enjoyable ways through this fair. Attendees can expect demonstrations on straightforward cooking methods, recipe ideas, and, of course, a chance to taste the popular “live Kikuage,” which is favored for its firm texture during the summer.

Tottori's Commitment to Quality Kikuage


Tottori prefecture stands as one of Japan’s leading producers of Kikuage mushrooms, actively enhancing its status as a primary production area. Collaborations with numerous local farmers help to promote Tottori as a representative food source, reinforcing quality and sustainability.

The Japan Mushroom Center focuses on improving the quality of Kikuage varieties and has developed a scrumptious, robust strain that even large restaurant chains acknowledge.

Since 2023, the organization has been dedicated to simplifying the culinary process by offering “pre-cooked and cut” Kikuage products, such as slices, chips, diced pieces, and powder. For example, Kikuage slices can easily enhance salads, while chips make for a perfect accompaniment to rice dishes.
