‘Bellustar Journey 〜津貫 五島 Whisky Experience〜’. This unique whisky pairing set will be offered at the hotel's stunning 45th-floor main bar, Bar Bellustar.
This edition of
Bellustar Journey is the 11th iteration, showcasing a collaboration between Beverage Director Yoshida Shigeki and Chef Takesue Munihiro from Restaurant Bellustar. This time, the focus is on the whisky heritage of Kagoshima, a region celebrated for its natural resources that forge exquisite flavors in whisky making.
The star of the pairing is the hotel’s original whisky, the
Single Malt Tsukin Goto Special Edition, a second unique offering from the Mars Tsukin Distillery located in Minami Satsuma City, Kagoshima Prefecture. This distillery is renowned for its commitment to crafting authentic Japanese whisky that embodies local terroir. The
Tsukin Goto whisky is characterized by a warming aging process due to its fluctuating climate and the softness provided by the local spring water. With a peaty presence of 50 parts per million, this whisky harmoniously balances heavy peat aromas with the sweet and soft finish derived from the cognac barrels used in its maturation.
Guests can enjoy this rich whisky straight, on the rocks, or as a highball, allowing for a versatile tasting experience that showcases the spirit's robust character. As Beverage Director Yoshida explains, the combination of smoky and fruity notes in
Tsukin Goto enhances the barbeque flavor of the accompanying dish, creating a memorable tasting adventure.

The culinary highlight of this pairing is a dish featuring Kagoshima's famous black pork, served in a taco style combined with a sauce made from local barley miso. This dish embodies the spirit of Kagoshima's agricultural bounty, using confit of the region’s black pork, complemented by a unique salsa made with yuzu pepper rather than traditional chili.
