Nestled in the heart of Tsukiji, Tsukiji JISAKU has been a beacon of Japan's culinary art since its establishment in 1931 by the first head chef and owner, Jisaku Honda. Occupying a sprawling 800 tsubo (approximately 2,640 square meters), Tsukiji JISAKU features a beautiful Japanese garden that transforms with the seasons. At its center lies a serene pond, home to over 150 colorful koi fish gliding gracefully through the water. Surrounding this picturesque scene are various tatami-matted rooms, each designed to offer diners a unique experience of tranquility and exclusivity.

Jisaku Honda believed deeply in the Japanese ethos of hospitality, emphasizing the importance of food as a medium for bringing joy to people. During the day, visitors will be engulfed in a natural soundscape that complements their surroundings, mesmerizing their senses as they enter the restaurant’s serene environment. About the Creative Team


The concept of 'Sumiike' was created by Minori Nagashima and Yuki Anai, with the creative and technical direction provided by Yuki Anai of non-classic Inc. Programming support comes from both non-classic Inc. and UNLIT Inc. The exquisite sound design is crafted by Minori Nagashima, while Hakuten Corporation is responsible for the construction.
