A New Culinary Journey Begins at Kien
On June 5, 2026, a new culinary gem will open in the heart of Nishi-Azabu, Tokyo - Kien. This restaurant has a rich heritage, drawing inspiration from the esteemed "Niku Kappo Jo," which has received a Michelin star for eight consecutive years. The new establishment will be helmed by Chef Hayato Maruko, a seasoned sous-chef at Jo, who has spent the last seven years honing his skills and philosophy under the mentorship of Chef Taketaro Okubo, the creator of Jo.
Concept of the Restaurant
Kien endeavors to showcase the true essence of its ingredients through a carefully constructed omakase course, which emphasizes various cooking techniques. Using meticulously selected ingredients such as Mita Seito beef and seasonal vegetables from trusted producers, Kien aims to reflect the unique characteristics and stories of each component on the plate.
What sets Kien apart is its commitment to the interplay of fire, aroma, temperature, and texture. Each element is intentionally designed to create a memorable dining experience that merges the ambiance, service, and flow of time into a single moment.
The Essence of Kien
Kien's name carries significant meaning—symbolizing the connections between people and the circle of shared experiences that unites their passions. It is a place where the aspirations of growers meet the sensibilities of chefs, culminating in a dish that brings joy to its diners. This circular exchange of thoughts and feelings is at the heart of what Kien represents.
