During a visit to their facility in late January, the staff learned about the annual production waste of approximately 25 tons of yuzu peels and seeds, a byproduct that had previously gone to waste. After discussing the challenges of reusing these materials, our team proposed utilizing the peels to develop a new culinary item.

The resulting product brings together the zesty flavor of Oku Ise yuzu with the spiciness of green chili peppers and the texture of pickled daikon, creating a fresh and versatile condiment. Ideal for serving alongside rice or as an accent in various dishes, this yuzu pepper sauce elevates meals with its unique taste profile.

A Traditional Touch in Packaging Design


The packaging design pays homage to local folklore, featuring a mythical creature called "Ushioni," half-bull, half-demon, which is said to dwell at Gyuki Mire, a legendary spot in Oda Town. This bold design aims to capture the attention of a wide audience, bridging the community's tradition with modern culinary innovation.

On its launch day, the product was introduced at a tasting event at the Oda Town roadside station, attracting numerous local residents and tourists who were eager to sample this new gastronomic offering.
