Breda University Initiates Groundbreaking Food Research Project on World Food Day
Breda University Launches Innovative Food Research Initiative
On October 16, 2025, coinciding with World Food Day, Breda University of Applied Sciences (BUas) has unveiled an ambitious three-year project focused on transforming food choices in professional environments. This undertaking is part of a collaborative effort that includes the Louis Bolk Institute and Wageningen University Research (WUR), along with a wide array of project partners.
The core aim of this research is to understand how food consumption in settings like hospital canteens can be optimized to promote healthier and more sustainable choices among staff and external visitors. As highlighted by BUas senior lecturer Michel Altan, hospitals and company restaurants have the potential to influence millions of diners daily, yet they often underutilize this opportunity to promote nutritious and eco-friendly eating habits.
Rising obesity rates and chronic health issues across the globe are driving the need for this research, which aims to address not only individual health concerns but also the broader climate crisis that is necessitating a shift toward more sustainable food production practices. Altan emphasized that many still regard healthy food as unappetizing, resulting in menus that tend to favor less healthy options.
With the aim to bring about a significant difference, BUas plans to create evidence-based strategies that go beyond traditional health promotion campaigns. Utilizing insights from behavioral science, nutritional research, and organizational psychology, the project will focus on fostering effective interventions. The initiative is structured around three main pillars:
1. Strategic Menu Adjustments: Offering a diverse range of healthier options that are both appealing and nutritious.
2. Smart Communication: Employing effective signage and promotional efforts that highlight the benefits of healthy eating.
3. Nudging Techniques: Designing the environment in such a way that making healthier choices is simpler and more intuitive for diners.
Unique to this project is the focus not just on the caterers and the dining experience, but also on understanding whether individuals maintain healthier eating habits at home. By measuring these outcomes, the project aims to identify the key factors that inspire sustainable behavioral change regarding food choices.
Central to BUas’s approach are the kitchen and service staff of the company restaurants. Research has already established that these employees play a critical role in influencing food choices through their knowledge, skills, and engagement with diners. Accordingly, the university intends to develop practical tools and training programs that empower these staff members to act as 'change agents' who can effectively promote healthy eating options.
The announcement of this project on World Food Day holds special significance. This day, established by the United Nations, serves as a reminder of the global challenges related to food security and the importance of proper nutrition worldwide. The groundwork laid by this research initiative can create meaningful impacts within the sector and beyond.
