Japanese Soba Noodles Tsuta, renowned for being the world's first Michelin-starred ramen shop, will host a unique celebration honoring its founding chef, Yuuki Onishi. This special event, titled "Yuuki Onishi Birthday Festival 2026," will take place at the Tsuta main location in Yoyogi-Uehara on June 19 and 20, 2026. The two-day event aims to commemorate Onishi’s contributions while paying tribute to the essence and future of Tsuta.
The theme for this year’s event is "Tracing the Beginning of Tsuta." Attendees will have the chance to sample a limited edition ramen called "Kore ga Genten" (This is the Origin), which was originally created during the 1st anniversary celebration of RAMEN STOCK. This unique broth-infused noodle dish serves as a nod to 'Nanae no Aji no Mise Mejiiro', Onishi's revered training ground and Tsuta's starting point. The dish reflects the flavors and spirit that kickstarted Tsuta's journey in the world of ramen.
Featured Ramen – "Kore ga Genten"
"Kore ga Genten" is not merely a reinvention but a sincere homage to the original recipe that took form years ago. It combines premium Hitachi jidori chicken and Tokyo X pork as the backbone, meticulously layered with the umami essence of dried ingredients, vegetables, and seafood to create a broth that offers both depth and simplicity.
