Takashi Yamashita | Founder of Minimal

Born in 1984 in Gifu Prefecture, Takashi's encounter with the bean-to-bar chocolate model inspired him to innovate within the chocolate landscape. In 2014, he established Minimal in the Tomigaya neighborhood of Shibuya. His dedication includes spending over four months annually on-site in cacao-producing regions, negotiating with farmers and promoting sustainable quality improvements. His commitment to craftsmanship has earned him accolades, including selections for the Good Design Award and WIRED Audi Innovation Award. Takashi's ultimate aspiration is to experience delectable cacao from all over the globe.

Asahi | Engineering Director of Minimal

Asahi, born in Toyama Prefecture in 1976, transitioned from a systems engineer to a skilled Italian chef. After achieving sommelier certification in Italy, he partnered with Takashi to form Minimal in 2014. As the Engineering Director, Asahi has also contributed significantly to Minimal’s success, earning a World Gold award at the International Chocolate Awards in 2017. Passionate about developing unique flavors and pairing principles, he continuously seeks innovative approaches to chocolate craftsmanship.

The dedicated team of chocolatiers at Minimal visit cacao farms worldwide, handcrafting chocolate with meticulous skill and attention. They emphasize sustainability and perfecting cacao fermentation and drying processes while ensuring ethical trading with farmers to uplift their communities. With their unique philosophy of "subtracting to highlight," Minimal has consistently garnered international awards, achieving over 103 accolades in a decade.
