10COUNTER initiative, a unique restaurant model, is designed specifically to support young, aspiring chefs seeking independence in the food industry. The project, which boasts a cozy setup of just
10 seats at the counter, aims to foster an intimate dining experience while providing hands-on operational training for chefs.
Origin of the Project
The
10COUNTER project was developed as part of a broader initiative by
Kiman Co., Ltd., a company specializing in seismic reinforcement construction. Located within the revitalized
REDO Jimbocho building, which has undergone renovations to breathe new life into an older structure, this restaurant is a testament to the company's commitment to not only improving safety through earthquake-resistant design but also injecting new value into the community. The founder, Takahiro Katayama, envisioned the restaurant as a space for sharing and connecting with the local area.
Interestingly, what started as the idea for a rotating pop-up restaurant soon evolved, following discussions with renowned chef
Funaoka, into a permanent platform where young chefs could establish their dreams. The core belief driving this project is the profound impact of hands-on experience and the community’s support in nurturing talent.
Learning and Growing At 10COUNTER
Chefs selected for the
10COUNTER program will get the chance to run their restaurant for up to
two years. This model not only empowers them by allowing management of daily operations but also grants them the opportunity to learn crucial culinary and customer service skills in a supportive environment. Many young chefs abandon their dreams of opening their own restaurants due to the high costs and risks involved.
10COUNTER aims to counteract these challenges, providing the significant resources and mentoring needed to succeed.
Additionally, the program fosters a cycle of growth as chefs move on to new ventures after their time at
10COUNTER, passing the torch to the next talented individual waiting for an opportunity to shine. With only 10 seats at the counter, the interaction between chefs and diners is enhanced, creating a warm, welcoming atmosphere where culinary arts and personal stories blend.
The restaurant's name carries a unique meaning—the '10 seats at the counter' represent a countdown to independence, a preparatory phase for chefs just before they launch their own endeavors. The logo symbolizes a rocket launch pad, representing the moment dreams take flight.
The Opening Party and Chef Introduction
Mark your calendars! The
Kiro; restaurant, as part of the
10COUNTER initiative, will have its grand opening on
September 6, 2025. Everyone is welcome to join the festivities from
5 PM to 11 PM at
1F REDO Jimbocho, 1-37-1 Kanda Jimbocho, Chiyoda-ku, Tokyo. This will be an excellent chance to savor delicious dishes created by the young chefs and to support their burgeoning dreams.
Chef Spotlight: Takumi Tenma
Takumi Tenma, born in 2000 in Tokyo, leads the kitchen at
Kiro;. From a young age, he has pursued his passion for cooking. After graduating from
Tsuji Culinary Institute in Osaka, Takumi honed his skills at
coulis in Tokyo. His culinary creations emphasize simplicity while showcasing the flavors of fresh, locally sourced ingredients. Now, as part of the
10COUNTER initiative, he’s excited to share his Italian-influenced dishes that use seasonal vegetables from his family farm.
