Savor the Exquisite Fat of Returning Bonito: August Limited Fest

Experience the Flavorful Augmented Returning Bonito Festival at Sakura Suisan

This August, Sakura Suisan is set to captivate seafood lovers with an exclusive event titled "Returning Bonito Festival," running from August 1st to August 31st, 2026. As part of the Umekai Group, which operates a chain of seafood restaurants including Sakura Suisan, Sakana-sama, and Sakana ga Ichiban, this festival aims to showcase the rich essence of the seasonal fish through four special dishes that combine traditional and innovative culinary techniques.

Celebrating the Returning Bonito

The stars of the festival are the exquisite Returning Bonito (modori katsuo), which is freshly sourced from the Toyosu Market. Unlike the early spring bonito, known for its delicate flavor, the Returning Bonito, which swims back south after feasting in northern waters, boasts a rich, indulgent fat that is hard to resist. This season's festival highlights the luscious texture and irresistible flavor of this sought-after fish.

The attention to detail is evident in the preparation. Expert chefs at Sakura Suisan carefully process each fish upon arrival, ensuring that every cut highlights the unique qualities of the different parts, maximizing the enjoyment of its tender texture and rich fat.

Specials from Izu's Hidden Culinary Gem

One standout dish that showcases local tradition is the "Uzuwa," a lesser-known delicacy from the Izu region, often cherished by fishermen. At Sakura Suisan, the dish is reinterpreted using the Returning Bonito. The chefs combine the tender flesh of the bonito with a special miso made from fresh green chilies—a spirited accompaniment that reflects the dish's heritage. This striking interplay of flavors creates a wonderfully satisfying experience, especially in the hot summer months—a perfect treat for those seeking a hearty snack.
