About National Azabu's Dry Aged Beef



National Azabu aims to provide a genuine taste experience. The drying process emphasizes not only tenderness but also the rich flavors and aromas of beef, carefully selecting cuts that prioritize robust flavors over mere marbling. Under Kato's supervision, the meat undergoes a meticulously controlled aging process free from excessive fat content to enhance the natural flavors and aromas of the selected cattle.

A dedicated natural convection aging chamber manages temperature, humidity, and airflow over a span of 50-80 days. This method enables the meat to absorb moisture and trap premium umami compounds—like amino acids and nucleic acids—created during aging. With the gradual breakdown of muscle fibers, diners can savor the lingering scents and delightful texture of the beef, as each bite releases a strong flavor and aroma that promises a heavenly indulgence.

Product Lineup and Upcoming Sales Schedule



[Phase 1] Japanese Wagyu (Available from October 4, 2025)


For devoted beef lovers, National Azabu sourced a rare cut with an exquisite balance of red meat and marbling, identified as B.M.S. 3. Currently, only 1.5% of all Wagyu qualifies under this grade (as per the 2023 Livestock Improvement Center's assessment). This specialty meat will be aged for approximately 60 days in Kyounaka's natural convection aging chamber, ensuring a unique dining experience for special occasions.

  • - Tomahawk Steak: A spectacular cut from the bone-in ribeye delivered impressively, it offers not just a visual treat but ensures every bite around the bone is bursting with flavor.
- Price: Approximately 1 kg per cut at 28,500 yen (2,850 yen per 100g).

  • - Sirloin Steak: Dubbed the "king of steaks," this cut increases in flavor and aroma through aging, with a thickness of approximately 3 cm that enhances the tasting experience.
- Price: Approximately 400g per cut at 12,960 yen (3,240 yen per 100g).

  • - Loin for Grilling: Slices of various loin sections expertly cut for grilling to deliver the perfect balance of flavor and sweetness.
