A Unique Culinary Experience
At 'est,' under the culinary guidance of Chef Guillaume Bracaval, the essence of Japanese culture and seasonal produce is reflected in the menu. The name 'est' signifies a commitment to 'Emotion, Season, Terroir,' highlighting their dedication to sourcing over 95% of ingredients directly from domestic producers. By merging traditional French culinary techniques with Japanese craftsmanship, 'est' offers a sophisticated and delicate menu that resonates with the changing seasons.
Chef Bracaval’s philosophy is rooted in a deep respect for Japanese terroir. He personally visits local farms to understand the environment and flavors, aiming to create dishes that are not only memorable but also unique each year, mirroring KRUG's own commitment to celebrating the individuality of each grape harvest.
The KRUG terrace plan allows guests to experience rare selections of KRUG champagne served by the glass, along with a tasting set of three different varieties. The Philosophy of KRUG
Founded in 1843 by Joseph KRUG in Reims, Maison KRUG is an embodiment of uncompromising quality and vision. Joseph’s philosophy was clear: joy is at the heart of Champagne. He transcended the notion of vintage to ensure excellent quality, unaffected by the whims of climate.
By emphasizing the uniqueness of each vineyard plot, he established the concept of a vast 'library' of reserve wines, setting KRUG as the premier house to produce only the finest prestige champagnes consistently. This vision has been passed down through six generations of the KRUG family and lives on in every bottle.
