A Unique Culinary Experience: Dashi Udon from Hanamaru



Hanamaru Udon, a renowned chain specializing in Sanuki udon, is set to elevate the dining experience with a new product line that creatively transforms the beloved rice dish, ochazuke, into an innovative udon offering. From January 8, 2026, nationwide (excluding some locations), customers will have the chance to try three limited-time dashi udon varieties: "Onsen Tamago Dashi Udon", "Nanko Ume Dashi Udon", and "Beni Sake Dashi Udon".

The Essence of Traditional Dashi



Infused with the rich flavors of iriko (dried sardines) and kombu (kelp), Hanamaru's signature dashi forms the base of this new udon dish. The star ingredient, highly regarded Yaki Nori (roasted seaweed) from Ariake, complements the dashi beautifully. As the seaweed interacts with the warm broth, its aroma and flavor emerge, creating a unique taste experience that varies from the initial crunch to a delightful, soupy meld. This fusion of textures and flavors promises to wrap diners in a cozy embrace, particularly perfect for winter.

Onsen Tamago Dashi Udon

Nanko Ume Dashi Udon


Featuring two plump Nanko plums from Kishu, this udon offers a refreshing tartness that enhances the umami of the dashi. The unique flavor profile of the ume brings a delightful zing, showcasing the seaweed’s essence.

Beni Sake Dashi Udon


This dish combines delicately shredded beni sake (salted salmon) flakes that perfectly meld with the seaweed. The union of flavors between the salmon and the nori speaks to the dish's esteem as the “ultimate bowl of udon inspired by ochazuke.”

All prices inclusive of tax; dine-in and takeout will have the same pricing except for a 30 yen container fee for takeaway. Some store prices may vary.

Availability


The dishes will be sold at nearly all Hanamaru Udon locations across Japan, from January 8 to February 11, 2026. Please note, they will not be available for delivery or mobile order.
