Ginza Hachigo, a renowned ramen restaurant in Tokyo's Chuo Ward, has been recognized in the Michelin Guide Tokyo 2026 with a Bib Gourmand rating. This marks the seventh consecutive year that Chef Masamitsu Matsumura's establishment has achieved this honor. The Michelin Guide, known for its rigourous evaluation, will go on sale nationwide on September 30, 2025, and features over 16,000 restaurants across more than 40 areas.

Chef Matsumura, who previously spent 36 years honing his skills in French cuisine as the executive chef at the Kyoto ANA Crowne Plaza Hotel, embarked on a journey to create exceptional ramen dishes. With the motto of making fine dining accessible to all, he envisioned bringing the essence of a full-course meal into a simple bowl.
