Innovative Collaboration Between IDDK and Kikumasamune Brewery for Sake Production in Space

Exploring Sake Production in Outer Space: A New Frontier



On April 30, 2025, a groundbreaking partnership was initiated between IDDK, a Tokyo-based biotechnology company, and Kikumasamune Brewery, a prestigious sake manufacturer from Hyogo Prefecture. Their Memorandum of Understanding (MoU) aims to revolutionize sake brewing by harnessing the unique environment of space. This collaboration merges IDDK's innovative space bio-experimental platforms with Kikumasamune's deep-rooted traditional brewing expertise, focusing on the effects of microgravity and cosmic radiation on fermentation and brewing processes.

During a closed networking event concerning IDDK’s upcoming satellite launch dedicated to space bio-experiments, the MoU was exchanged, marking the official commencement of this unprecedented venture. IDDK will leverage its space bio-experimental platform to explore various aspects of fermentation, including yeast propagation, development of rice koji, and microbial coexistence in extraterrestrial conditions.

Scientific Exploration of Japanese Brewing Techniques



The unique partnership has set its sights on scientific inquiries that delve into how traditional fermentation processes can adapt to the harsh realities of outer space. Both companies are committed to studying and analyzing the behaviors of yeast and koji mold in space environments, which may lead to new insights in brewing science. Not only does this endeavor challenge the limits of traditional sake brewing techniques, but it also holds the potential to create an entirely new category of sake: “space-brewed sake.”

Wataru Ikeda, the Chief Scientific Officer of IDDK, expressed his excitement about collaborating with Kikumasamune Brewery, stating, “Although there have been previous attempts at making sake related to space, scientifically exploring this traditional craft alongside IDDK opens exciting possibilities for innovation. With Kikumasamune’s 360-year legacy, we intend to uncover how extreme space conditions influence fermentation and aging, potentially leading to the creation of new value through our findings.”

A Journey into the Unknown



Toshinari Takahashi, Head of the Research Institute at Kikumasamune Brewery, initially found it challenging to visualize what space sake brewing would entail. However, through extensive discussions with IDDK, he recognized the potential of this venture. Takahashi remarked, “Once we started exchanging ideas, I realized that brewing in space is a genuinely dream-like concept. Our research institute operates under the philosophy of ‘sake creation,’ utilizing traditional techniques while daring to explore new territories. Space brewing fits perfectly into this vision. Though we are still in the exploratory phase, I am excited to collaborate with IDDK, taking measured steps forward in uncovering what is possible.”

The project will utilize the commercial services available on IDDK's space bio-experimental platform beginning in 2026. This proposed timeline will include the transportation, storage, and cultivation of important microorganisms, alongside analyzing fermentation behavior under space conditions. The ultimate goal is to bring this groundbreaking innovation to life by producing sake that may not only be enjoyed on Earth but could potentially be part of space travels and future interstellar endeavors.
