May 27th, 2025. This exclusive dish will be available at all four locations in Tokyo (Shinjuku, Ichigaya) and Osaka (Kitahama).
About Okaka
Okaka, whose name is derived from
katsuobushi (dried bonito), embodies the essence of savoring dashi (broth) with its slogan, "Enjoy Dashi to Your Heart's Content." The restaurants are well-known for their ultra-thin, freshly shaved katsuobushi, prepared right at your table to enhance the flavors of their
Dashi Shabu-Shabu.

The new
Aosa Seaweed Dashi Shabu is crafted using a bespoke blend of dashi that incorporates fresh, nutrient-rich Aosa seaweed sourced exclusively from the
Ise-Shima coastline. This area’s unique environment, where clear waters blend with the nutrient-rich river flows from the mountains, allows the Aosa seaweed to thrive, resulting in its vibrant color and refreshing ocean aroma.
This luxurious dish features either
Kagoshima Black Pork or
