In a delightful collaboration celebrating Shizuoka's rich culinary heritage, Nihonbashi Dashiba will unveil two special limited-time dishes, beginning November 8. Utilizing the finest local ingredients, these dishes are designed to provide guests with an authentic taste of Shizuoka's distinctive flavors.

Shirasu and Sakura Ebi Katsuobushi Meshi

The first of the special offerings is the Shirasu and Sakura Ebi Katsuobushi Meshi. This dish features a base of katsuobushi rice topped with freshly prepared shirasu (whitebait) from Yoshida Town and sakura ebi (sweet shrimp) from Yaizu City. A hint of fragrant yuzu powder sourced from Kawanehon Town elevates the dish, making it an appetizing treat.

This rice dish contains tender orido eggplant and sakura ebi, providing a unique and memorable culinary experience.

Focus on Quality


In crafting this dish, the creator utilizes locally sourced orido eggplant and sakura ebi, cooked gently in a dashi made from katsuobushi. The aim is to maintain the foods' authentic flavors and present them simply yet deliciously. Notably, the dried sakura ebi is used to allow it to rehydrate during cooking, merging its concentrated umami with the dashi flavor, ultimately allowing the orido eggplant and rice to absorb that exquisite essence.

An Event to Celebrate Shizuoka


Running from November 8 to November 30, the Nihonbashi Shizuoka Shokudo celebrates the culinary treasures of Shizuoka's five cities and two towns (Shizuoka city, Shimada city, Yaizu city, Fujieda city, Makinohara city, Yoshida town, Kawanehon town) at 15 participating shops in and around Nihonbashi. Each shop presents a specially crafted limited-time menu that showcases the best of local ingredients.

Honkare Katsuobushi: A Premium Ingredient


At Ninben, honkare katsuobushi undergoes rigorous crafting, involving multiple rounds of mold application and sun-drying over 4 to 6 months. This process results in a katsuobushi known for its rich aroma and refined flavor, devoid of any fishy odor, making it a favorite among high-end restaurants. Guests are encouraged to experience the unique taste and fragrance of this premium ingredient in the new dishes.
