What is 'Selected Upper Misuj'?
The 'Selected Upper Misuj' is not just any cut; it comes from the center of the 'Misuj' area of the beef shoulder blade. This cut yields only about 2-3 kilograms per whole cow, and among that, the very best part, which has exquisite marbling, is chosen to create this dish.
