Under the expertise of Chef Shirakawa, guests will indulge in beautifully crafted dishes highlighting the culinary treasures of Kochi. Imagine savoring the delicate konbu-wrapped mikan sea bream quenelles inspired by Ehime's famous jakoten, paired with a savory consommé featuring locally sourced mushrooms from Yamagata. The highlight of the evening will surely be the exquisite grilled skipjack tuna, renowned for its tight texture, served alongside a ginger and yuzu sorbet.
The meat course features a delightful combination of Tosa Akaushi beef from Kochi and Sendai beef, enhanced with the zesty touch of finger limes and deep flavors of Ginzo salt, which accentuate the natural flavors of the meat. Each dish on the menu is meticulously arranged to offer a harmonious blend of local ingredients. The amuse bouche features a creative presentation of Shimanito pork and Ou County deer pâté, complemented by a tartlet filled with Tosa bunka, a citrus variety from Kochi, and served with guava tea jelly and root celery cream.
