On June 5, 2023, UN GRAIN, a specialized shop for miniature sweets, will unveil two exquisite additions to its lineup: Kake Tosa Bergamot and Le Brownie. Both creations, designed by Chef Takashi Okazawa, embody a pursuit of lightness and fragrance, aiming to create new memories intertwined with delightful aromas.

Kake Tosa Bergamot is a moist cake that combines a range of flavors through the incorporation of Kochi bergamot confiture into almond cake batter. The addition of a syrup crafted from bergamot juice and gin ensures that each bite bursts with a refreshing citrus note. Topped with a tart royal icing glaze, the cake retains its moist texture beautifully while the bergamot fruit gel adds a vibrant pop of color and flavor contrast on top. Its unique design and exquisite taste are bound to impress any sweet enthusiast.

Le Brownie offers a light twist on the traditional brownie, made with rich dark chocolate that can be enjoyed in any season. Meet Chef Takashi Okazawa



Chef Takashi Okazawa, the brilliant mind behind this delectable lineup, graduated from Saitama Bell Epok Pastry and Culinary School in 2016 and joined Patisserie Paris Seveille, where he developed his skills for eight years. During his time there, he was responsible for both fresh and baked sweets, mastering the fundamentals of French pastry. His journey also included training in Versailles at Au Chant Du Coq, culminating in his appointment at UN GRAIN in April 2024 as a head pastry chef. Beyond his professional achievements, Chef Okazawa has won awards at various competitions, including a recent triumph at the Utsumi Cup.

The name UN GRAIN translates to “a grain” in French, symbolizing the journey from a single seed to delightful sweets created with care and passion. The establishment aims not only to provide delicious pastries but also to foster joyful moments among family and friends.
