The launch of the Premier Series will include two standout creations. The first offering is the
Premier Robe de Reine, priced at ¥3,780, available from September 1 to November 30. This remarkable Mont Blanc cake combines premium Japanese chestnuts with hojicha, a roasted green tea, to create a sumptuous dessert. Every day, the chef delicately pipes chestnut paste made from the rare Kumamoto variety known for its robust flavor and aroma. The cake's exquisite presentation is reminiscent of a royal gown, aptly named after the French phrase meaning ‘Queen’s Dress’. Premier Ensemble, set to debut on December 1 for a limited time, is an ambitious chocolate cake that elegantly marries high-quality yuzu from Tokushima with the finest chocolate. Meet the Pastry Chef
Leading the creation of these delightful cakes is Wako's talented
Pastry Chef Yudai Ono. After graduating from culinary school, he joined Patisserie La Vie Douce in 2013 and later became the pastry chef at the Michelin-starred
Ogasawara House. In 2022, he ascended to the role of sous-chef at Wako, and by April 2024, he will take up the mantle of head pastry chef at Wako. Ono has a decorated competition history, securing a bronze medal in the candy art category at the 2017 Japan Cake Show and a silver at the Utsumi Cup Junior category in 2018.
