Shangri-La Tokyo, nestled in the heart of Marunouchi, has unveiled its much-anticipated autumn dinner menu, 'Giappone', available from September 2 to November 29, 2025. This menu features a splendid array of seasonal ingredients carefully curated by Chef Matthias Sutter, offering diners a unique culinary journey through Japan's diverse flavors.

The dining experience begins with an amuse-bouche featuring three creations: a refreshing cold soup made with Hokkaido pumpkin, a delightful crab and cheese pastry, and a tart topped with salmon roe. The first course showcases the famed bluefin tuna from Aomori, elegantly drizzled with a tangy sauce made from concentrated beet juice, setting the stage for the courses to come.

Following the starters is a particularly autumnal dish: thinly sliced Yokohama beef, prepared using low-temperature cooking techniques, served with a rich consomme infused with the aroma of matsutake mushrooms and sansho pepper. This dish captures the essence of Japanese autumn in every bite.

Next, the handmade tagliolini pasta is tossed with mushrooms and the flavorful Kumamoto chicken known as 'Amakusa Daiou', all enhanced by the indulgent touch of premium domestic olive oil. The main attraction is a specially selected dish featuring deer from Kyoto, paired perfectly with figs, and draped in a sweet and sour puree made from red cabbage.

To conclude the meal, guests will indulge in a dessert crafted from Kagoshima sweet potatoes and black sugar, served with mascarpone ice cream and a luscious black syrup. The vibrant red of this dessert’s presentation pays homage to Japan’s beautifully autumnal landscape, reminiscent of the changing leaves.
