This summer, GINZA KUKI, a Japanese restaurant specializing in fermentation and aging, is presenting a unique dining experience that beautifully blends traditional culinary practices with innovative flavors. Run by Hikari Hakkou Jiyou Co. (a subsidiary of Hikari Miso Co., Ltd.), this restaurant promises a monthly changing course, highlighting the essence of Japanese cuisine and the artistry that goes into using miso.

A Culinary Journey into Miso



In July, GINZA KUKI invites diners to embark on a gastronomic journey that showcases specially selected ingredients paired with the signature Ginza Kuki Selected miso. Inspired by the stars of the summer night sky, the course begins with an appetizer — a visually stunning tofu dish resembling the Milky Way, accompanied by seasonal vegetables and a refreshing miso dipping sauce.

A Feast of Exquisite Dishes



Each dish in the July course is meticulously prepared using premium ingredients. Here’s a glimpse into the course:

  • - Appetizer: The first dish, 'Milky Way Tofu', features a delicate tofu created to resemble summer's night sky, paired with okra, paprika, and a rich miso dipping sauce. This dish not only delights the eyes but also tantalizes the palate.

  • - Assorted Small Dishes (Hashu): Diners can savor a variety of delightful items such as seasoned Isikawa sweet potato skewers, pickled ginger with pork, spicy scallop with fig, and tempura with sweet corn and grilled edamame, among others.

  • - Grilled Dish (Yakimono): The fresh sea bass, grilled with miso and accompanied by seasonal garnishes, provides a rich, flavorful experience. This dish emphasizes the traditional techniques of miso-marinating and grilling.

  • - *Main Course (Tsuru): The star of the meal, Ozaki beef served with summer vegetables, is cooked to perfection and topped with a substantial helping of aged miso sauce. This offering showcases the harmonious relationship between the beef’s texture and the depth of flavor found in the miso.

  • - Noodle Dish (Shinogi): Delight in the sweetness of sweet shrimp sushi accompanied by a sweet miso marinade, providing a perfect balance of taste.

Operating hours for lunch (Saturdays only) are 11:30 AM to 2:00 PM, and dinner runs from 6:00 PM to 10:30 PM. Please note that the restaurant is closed on the 2nd and 4th Mondays, Sundays, and public holidays, with limited holidays in summer, Golden Week, and New Year's.
