The Echizen Fukui Fair 2026 Summer, celebrating the unique local flavors of Fukui, is set to launch at Nakameguro Torimachi and Shibaura Torimachi in Tokyo from August 28 to September 18. This exciting event showcases local ingredients and features a special menu designed to highlight the culinary heritage of Fukui.

In collaboration with LDH JAPAN, which has a regional revitalization partnership with Fukui City, this event aims to promote not only food but also city marketing efforts. The efforts include a variety of initiatives across different sectors, focusing on the rich food culture of Fukui.

At the heart of this fair is Torishiki Ichimon, operated by LDH kitchen, which boasts the culinary expertise of renowned chef Yoshiteru Ikegawa. Their casual dining brand presents a menu brimming with fresh produce sourced from the Fukui Reihoku region.

Unique Menu Highlights



1. Ruby of Echizen Kimchi: This dish showcases the sweet and juicy Ruby of Echizen from Fukui, creatively transformed into a spicy kimchi using homemade yangnyeom sauce—perfect as a snack or palate cleanser.

2. Eiheiji Tofu Cheese Dakgalbi: This delightful dish combines the sweet-spicy flavor of coating sauce, cheese, and the juiciness of thick-cut fried tofu, blending Fukui's local flavors with a Korean classic.

3. Fukui Corn and Jidori Chicken Honey Butter Tempura: Featuring seasonal Fukui corn and locally raised Fukuchi chicken, this tempura dish is finished with honey butter and green laver for a perfect sweet-savory taste.

4. Echizen Soba Mizore Cold Noodles: A refreshing choice for warm summer days, this dish showcases Fukui's famous soba in a cool noodle dish, enhancing the flavors with its chilled broth.

5. Kuzuryu Maitake and Date Chicken Bibimbap: Enjoy the rich flavors of Kurozuyufumita mushrooms and Date chicken in this bibimbap, cooked in a stone pot to meld the aromas and taste.

6. Korean Zenzai - Tanpachyu: A delightful take on traditional Korean dessert using Fukui's famous mizu yokan combined with sweet red beans, offering soothing sweetness.
