At the heart of this course lies the exceptional bonito sourced directly from Yoryoku Suisan located in Sukumo Bay, Kochi. Known for its remarkable freshness and rich flavor, the bonito is served as an appetizer, artfully paired with truffle aroma to create a dish that encapsulates the essence of the season. To enhance the flavors without overpowering the delicacy of the fish, a subtle hint of garlic is introduced, providing a perfect balance.
