Inspired by a long-standing dry goods store from Tsukiji, this ample burger features two patties made from 100% Japanese wagyu beef, accented by chicken confit and cheese. Uniquely, it replaces the conventional pickles with pickled shiba, offering a remarkable taste that seamlessly blends Japanese elements with Western favorites.
2. Chilled Peach Pasta
This refreshing summer dish artfully combines seasonal Japanese peaches with chilled capellini pasta. The sweetness of the peaches harmonizes beautifully with the parmesan cheese, resulting in a dish that’s both light and flavorful, making it a perfect choice for warm weather dining.
