Hotel Continental Fuchu, nestled in the heart of Fuchu City, Tokyo, is set to delight diners with the launch of unique a la carte and course menus featuring their meticulously crafted 'Tokyo Menma'. Starting June 12, 2025, guests can savor this exclusive ingredient across three of the hotel's renowned restaurants.

What is 'Tokyo Menma'?


'Tokyo Menma' is not your average bamboo shoots. This exceptional product is entirely handmade by the hotel’s dedicated staff. From the careful selection of young bamboo from the Awa region of Chiba Prefecture to the complicated processes of boiling, salting, fermentation, and drying, each step is handled with precision and care. This ensures that 'Tokyo Menma' not only embodies quality but also offers a unique twist to a traditional delicacy.

The Journey of 'Tokyo Menma'


The creation of 'Tokyo Menma' begins with the harvest of young bamboo, carefully selected when they reach a height of 1.5 to 2 meters. Despite the challenging terrain and heavy lifting involved, the hotel’s chefs embark on this labor-intensive process from April to mid-May, ensuring they do not miss the limited harvesting season.

Once harvested, the bamboo is brought to the factory for immediate processing. The bamboo shoots are split open and the hard outer layer is carefully removed, a challenging task that can leave even experienced chefs with sore hands.

After preparation, the bamboo is boiled in a giant rotisserie pot and salted for approximately a month. This meticulous process of brining involves removing excess salt and introducing lactic acid bacteria to allow fermentation, transforming the bamboo into the esteemed 'menma'. Finally, the fermented shoots are cut into manageable sizes and dehydrated to perfection before being seasoned with coarse salt, thus concluding the production of 'salted menma'. This year alone, the hotel expects to produce around 2 tons of 'Tokyo Menma'.
