In an inspiring development, Tsuru no Sake Brewery and Fukumitsuya have successfully completed their second collaborative brewing project, resulting in the limited release of "Tsuru to Fuku 2025 Junmai," scheduled for June 24, 2025. This project holds special significance as it symbolizes the resilience and rebirth of Tsuru no Sake Brewery, which unfortunately suffered complete destruction during the Noto Peninsula Earthquake of 2024.

The partnership aims not only to revive the brewery but also to embrace the future of sake production. This year's release will constitute a batch of 1,800 bottles that embodies a thoughtful approach to innovation within the traditional craft of sake brewing. Under the guidance of master brewers Kazuhiko Itaya from Fukumitsuya and Yukiko Tsuru, the team focused on creating a sake that showcases an exquisite balance of aroma, sweetness, and delicacy—qualities that promise a refined tasting experience.

One of the key innovations in this brewing process was the adoption of a unique polishing technique, known as “henkei seimai,” which allows the brewers to extract flavors characteristic of ginjo sake without overly polishing the rice. This method results in a sake that offers a vibrant, elegant flavor profile with a light and airy mouthfeel. The brewing of this sake is not only a technical achievement but also a heartfelt effort by both breweries to see the local Noto area flourish once again.

As for the naming and design, the sake is aptly titled "Tsuru to Fuku," which reflects the names of both breweries. The label continues the previous season's auspicious motif, featuring both brewers' names and seals on an elegant black bottle that highlights striking red characters, symbolizing strength and vitality.

The target market for "Tsuru to Fuku 2025 Junmai" includes sake enthusiasts, newcomers to the world of sake, as well as supporters of the Noto region’s recovery efforts.
