The Kagerou Project: A Short-Lived Sushi Phenomenon
Excitement continues to brew for the Kagerou Project, which has captured the hearts of sushi lovers since its inception. Having welcomed over 19,000 guests, the event showcases young sushi chefs' skills in an intimate setting. With its immense popularity, the project is set to extend its run from July 1 to July 15, offering a limited-time experience that promises to delight.
What is the Kagerou Project?
The Kagerou Project, named after the ephemeral nature of the mayfly (kagerou), embodies a mission to foster young sushi talent. This initiative not only allows participants to showcase their craftsmanship but also aims to narrate the essence of Edomae-style sushi, all at an accessible price point. Guided by the same team behind the renowned Edomae sushi restaurant 'Sushi Asahi', each dish is carefully crafted using red vinegar rice and seasonal fish sourced directly from Toyosu Market.
In a bid to enhance quality while reducing costs, the project is undertaking an ambitious approach by conducting direct market procurements at dawn, ensuring that the ingredients are fresh and the sushi is top-notch. The July offerings will maintain the same competitive prices as previous events without sacrificing quality.
