Only fish that weigh more than 100 grams, caught by the Japan Far Seas Purse Seine Fisheries Cooperative, can be labeled as "Toki AjI." This rarity is highly valued and is predominantly landed at the Matsura Fish Market in Nagasaki. The meat is characterized by its firmness, juiciness, and sweet, fatty flavor, making it a unique ingredient for the restaurant's exceptional dish.
