Kirin Ichiban Launches New Project to Celebrate Japan's Culinary Delights
Kirin Brewery Company, led by President Hideki Horiguchi, proudly announces the inception of a new project that is set to uplift Japan's culinary landscape through their flagship product, Kirin Ichiban Shibori beer. Since its launch in 1990, Kirin Ichiban has been committed to spreading joy across Japan with the delightful flavors that come from their unique "First Press" brewing process, which utilizes only the finest quality barley.
The core of this new initiative is to celebrate Japan's diverse and delicious food culture, particularly focusing on the emerging "new flavors" found in various regions throughout the country. Starting December 2025, Kirin will progressively introduce this project, aiming to bring informative and enjoyable culinary experiences to a broad audience.
As a first step, Kirin City, a subsidiary of Kirin Brewery (headed by President Jun Hatano), will unveil limited-time dishes at its 27 locations across Japan. The debut menu will highlight the luscious goodness of Hiroshima Lemon Salmon, starting with an Ethnic Poke made from this unique fish, available from December 17 to December 30, 2025. Following this, from January 7 to February 3, 2026, guests can indulge in a Mustard Sauce Carpaccio featuring the same fresh lemon-infused salmon.
About Hiroshima Lemon Salmon
Hiroshima Lemon Salmon is a uniquely bred fish nourished with feed mixed with fresh lemon juice sourced from Hiroshima. This innovative feed not only reduces the fish's natural odor but also enhances the meat's delicate flavor, lending it a subtle lemon aroma and a captivating orange hue. This new culinary direction promises to introduce diners to a delightful experience, emphasizing the incredible flavor spectrum available from the Hiroshima region.
Kirin Ichiban aims not only to promote these unique new tastes but also to expand joy through the pairing of food with beer. The project will evolve beyond Kirin City’s menu enhancements, broadening its reach across Japan in an initiative designed to imbue communities with culinary excitement rooted in local flavors. Every release will further engage patrons and food enthusiasts. Stay tuned for more updates as we embark on this culinary journey.
