Discover the Ultimate Summer Delight: Unique Kakigori at Hotel New Otani, Tokyo

Dive into the Ultimate Summer Delight

As the summer heat approaches Tokyo, the Hotel New Otani is setting the stage for a refreshing experience with its latest dessert creation: the ‘Shin Edo Kakigori’. This seasonal treat is available exclusively at the Japanese restaurant, KATO'S DINING & BAR, until the end of September 2025. Featuring exquisite natural ice sourced from Nikko and finely selected ingredients from the hotel, this kakigori promises to make your summer memorable.

With temperatures hitting above 25°C early this May, the Japanese capital is bracing for an unusually hot summer in 2025. To combat the heat and get everyone in the mood for summer, the Hotel New Otani is unveiling its ultimate kakigori, available in three unique flavors: ‘Wasanbon’, ‘Amaou’, and ‘Mango’. True to its name, ‘Shin Edo’ utilizes the refreshing and natural ‘Nikko Natural Ice’ as its main ingredient, offering a taste of Japan's rich cultural essence.

A Gift from Winter to Summer

The ‘Nikko Natural Ice’ is a gift of nature, formed from natural spring water that freezes under the cold of winter. Harvested using traditional methods passed down through generations, this ice is collected and stored with care, wrapped in sawdust until summer arrives. The craftsmen from Nikko dedicate themselves to creating this unique ice, resulting in an extraordinarily delicious product.

Unlike regular ice, the natural ice is pure and feels incredibly fluffy when shaved, reminiscent of cotton candy. This texture is a delightful surprise for anyone tasting this kakigori, as it elevates the entire experience beyond traditional shaved ice desserts. The smooth mouthfeel and reduced likelihood of the characteristic ‘brain freeze’ sensation allow diners to savor each bite until the very end.

The Flavors of Japanese Summer

The ‘Shin Edo Kakigori’ perfectly encapsulates the essence of Japanese summer with its three distinctive flavors:

1. Wasanbon: This version features a medley of traditional Japanese ingredients, including shiratama (white rice flour dumplings), yokan jelly, and black sugar syrup, finished with a drizzle of sweet black syrup. The combination is refreshingly cooling and highlights the beautiful nuances of summer’s traditional sweets.

2. Amaou: Created with 100% pure sauce derived from the exquisite ‘Hakata Amaou’ strawberries, this lavish kakigori embodies the sweet and juicy flavors of the berries. It is a treat for strawberry enthusiasts, complete with generous chunks of fresh fruit.

3. Mango: Representing the quintessential summer fruit, this variant blends tropical mango with traditional elements. It combines mango jelly filled with fruit and a generous topping of mango kuzu sauce, creating a unique fusion of flavors that harmonizes perfectly.

All three kakigori varieties are topped with light and airy meringue made from four different flavors: vanilla, strawberry, mint, and mango. This meringue not only enhances the refreshing feel of the dessert but also introduces a delightful crunch that complements the fluffy texture of the kakigori.
