Discover the Sustainable Sushi Experience with Kappa Sushi's Special 'Otome Tai'

Kappa Sushi and 'Otome Tai': A Celebration of Sustainable Seafood

Kappa Sushi, under the umbrella of the Colowide Group, is launching a special sushi menu featuring 'Otome Tai', or the 'mahi mahi', starting October 9th, 2025. This initiative aligns with the Japan Fisheries Agency's 'Gem of the Sea! Fisheries Women's Vitality Project', highlighting the importance of promoting women in the fishing industry.

'Otome Tai' is a beautifully pink sea bream nurtured in the rich waters of Kochi Prefecture. It is cultivated with care using a special feed that includes guava tea polyphenols, resulting in vibrant colors, firm texture, and a delicate flavor. This environmentally friendly aquaculture method ensures the well-being of the fish, minimizing stress and supporting a healthy ecosystem.

The cultivation, processing, and shipment of 'Otome Tai' exemplify a community-centered approach to the fishing industry. Through meticulous quality control, small-batch production, and responsiveness to local needs, this initiative represents an ideal model for sustainable seafood practices. This project not only aims to support local fisheries but also seeks to deliver a sustainable sushi experience that tourists and locals can enjoy with pride.

As part of the 'Kappa’s Select Sustainable Festival', this special menu will be available at Kappa Sushi restaurants nationwide for a limited time. Diners will have the opportunity to indulge in a variety of dishes featuring 'Otome Tai' at prices starting from 110 yen (including tax).
