The Legendary Auberge de l’Ill


Nestled in the picturesque village of Illhaeusern in the Alsace region, the original Auberge de l’Ill boasts over a century of exquisite culinary tradition. Established around 1880, it first opened its doors as L’Auberge Vert, only to be reconstructed after World War II as Auberge de l’Ill in 1949. This iconic restaurant has captivated local patrons and food enthusiasts from around the globe, solidifying its reputation as one of the world’s finest dining establishments.

At the helm of the restaurant is second-generation chef Marc Haeberlin. He followed in the footsteps of his father, Paul Haeberlin, embracing a passion for culinary arts at an early age. With professional training in France’s renowned kitchens, Marc assumed the role of head chef at Auberge de l’Ill in 1977 at the young age of 23. Over the years, he has successfully blended traditional Alsatian ingredients with modern cooking techniques, ensuring that the restaurant's menu continues to evolve beautifully.
