Discover the Opportunity to Take Over a Beloved Soba Shop in Mito, Japan

A Unique Opportunity to Continue a Legacy

Located in Mito City, Ibaraki Prefecture, Yosaburo-an is a beloved soba shop looking for its next steward. Operated by Yuuichi Kaneseki, CEO of BATONZ, the shop has been a cornerstone of the local community since its establishment in 1998. It was founded by Mr. Morita, who began his career in agriculture before transitioning to the art of soba making, inspired by family tradition.

The Story Behind Yosaburo-an

Yosaburo-an specializes in 100% buckwheat soba, made using locally sourced Hitachi Aki soba. Initially, Mr. Morita invited friends and family to taste his creations, gradually building a customer base as word of mouth spread about the restaurant’s quality. The name 'Yosaburo' pays homage to Mr. Morita's great-great-grandfather, reflecting the respect for the land passed down through generations.

In the beginning, Mr. Morita sourced his buckwheat from suppliers, but over time, he decided to cultivate the grain himself, renting nearby fields to grow the soba. Today, around 80% of the buckwheat served comes from Morita's own farm, demonstrating a strong commitment to local sourcing by also using farm-fresh vegetables whenever possible.

Initially, Mr. Morita’s goal was modest—he only hoped that satisfied customers would return. However, Yosaburo-an quickly gained popularity, becoming a favorite among locals. Unfortunately, due to the significant increase in customers and the aging of Mr. Morita and his staff, the shop had to close its doors at the end of last December.

Reflecting on his time running the restaurant, Mr. Morita treasures the saying, 'Kindness is not for others.' He was deeply touched by the community’s response as they flooded the shop with flowers and treats just before its closing.

Facility Details and Conditions for Takeover

The premises include a shared parking lot of about 500 tsubo, which does not incur a rental fee. It can accommodate large groups, with space for up to 70 cars, including multiple buses. Mr. Morita is offering the building for rent, with options for the kitchen equipment depending on negotiations with potential successors.

Yosaburo-an’s interior is welcoming, allowing for a comfortable dining experience. During peak hours, up to six staff members would work to serve customers, illustrating the bustling atmosphere during busy periods.

It's important to note that while the shop is seeking a successor, they must be prepared to recruit their own staff, as the original team may no longer be able to continue due to age.

Community Engagement and Charity Initiatives

Continuing Mr. Morita's legacy includes sustaining the charitable activities he has conducted for 24 years, benefiting local welfare groups in Mito and neighboring Shirosato Town. Annually, they provided 300 bowls of 'Kentinsoba,' directing proceeds back into the community, reinforcing the importance of social responsibility.

Potential successors will be expected to uphold this tradition and further participate in community engagement efforts, promoting their own restaurant while also giving back to the local area. The past initiatives have generated extensive media coverage and have become significant community events.
