A Culinary Journey Through History
In 1875, a foreign advisor named Henry Dallas brought a female cow from Yonezawa to Yokohama, marking the beginnings of what would become the renowned Yonezawa beef brand. The quality and flavor of this beef quickly gained fame throughout Japan, establishing Yonezawa’s status as a leader in high-quality beef production.
Simultaneously, as part of early modernization efforts, cherry trees and Western pear trees were introduced and planted in Yamagata, laying the groundwork for what would eventually become a major cherry production region. Today, the cherry has become a defining symbol of Yamagata, reflecting the region's dedication to quality agriculture.

This summer, from June 1 through August 31, indulge in the
Yonezawa Beef Summer Kaiseki. This luxurious course offers a variety of exquisite dishes, showcasing the finest selection of Yonezawa beef prepared by a restaurant that has been serving this delicacy for nearly a century. Here are some highlights of the menu:
- Chilled Yonezawa cold soup (Hiyashiru)
- Yonezawa cold chawanmushi with consomme jelly
- Yonezawa beef simmered delicacies
- Yonezawa beef misuji rolled and grilled with local soy sauce
- Yonezawa beef achilles tendon in vinegar
- Sliced Yonezawa beef, including raw cuts and grilled chilis

- Yonezawa beef marinated with sumire pickles
