Kenko Mayonnaise and Senrei: A Sustainable Culinary Collaboration



Kenko Mayonnaise Co., Ltd., headquartered in Suginami, Tokyo, has announced an exciting new product launch in collaboration with Senrei Co., Ltd., based in Onagawa, Miyagi Prefecture. This partnership aims to promote sustainability by creating upcycled food products utilizing byproducts from the production of frozen scallops. Starting July 22, customers can purchase two new items from their online store: Scallop Stomach in Garlic Soy Sauce and Scallop Stomach in Tomato Stew.

Addressing Food Waste with Upcycled Products



One of the pressing issues in line with the Sustainable Development Goals (SDGs) is food loss. Many consumable foods are wasted, including byproducts from manufacturing processes. Upcycled foods add value to these discarded items, transforming them into marketable products.

The scallop stomachs used in these new offerings are byproducts generated during the frozen scallop production process. Traditionally used in sashimi and stir-fried dishes, a portion also serves as fish bait, but significant quantities remain unused. In response to this challenge, Kenko Mayonnaise previously launched its first upcycled product in 2022: Garlic Butter Sauce with Scallop Stomach — a blend of rich butter, garlic, and scallops, which successfully captured consumer interest.

Now, the second phase of this project features two new items that incorporate the company's signature sauces: Scallop Stomach in Garlic Soy Sauce and Scallop Stomach in Tomato Stew. These products will be available through the company's online store.

Taste and Versatility



Scallop stomachs are recognized for their health benefits, delicious texture, and satisfactory bite. The new products combine these appealing characteristics with classic Kenko Mayonnaise flavors to create addictive tastes.

  • - Scallop Stomach in Garlic Soy Sauce: This dish features splashes of sesame oil and rich tamari soy sauce, alongside a punchy garlic and chili oil kick, resulting in a bold flavor.
