Kakujo Fishery Holdings has officially kicked off the season with fresh ankou straight from the market. You'll find various offerings at all Kakujo locations, including pot sets and fried versions featuring this unique fish.

Freshly Sourced Ankou



Around mid-October, a surprising number of whole ankou fish start arriving at Kakujo stores. Sourced from the ocean, these are no ordinary fish. Each one weighs between 6 to 10 kg or more, delivered in styrofoam boxes that stack high. Staff promptly cut them into various sections for pots and ready-to-eat fried delicacies, ensuring customers can enjoy natures best.

The Size and Quality of Ankou



During one of our visits late in October, we witnessed a massive ankou weighing over 13 kg delivered fresh from the Japan Sea. Extracting it from the box required considerable effort due to its bulk.

The preparation process is crucial; trained staff carefully fillet each fish to ensure every part is usable. Ankou's gelatinous skin, tantalizing liver, and delicate white flesh offer both texture and flavor that discerning palates crave.

Safe and Smooth Preparation



To prevent slipping during the filleting process, staff employ large knives with careful precision. Sensitively navigating the slippery surface requires skill. Each cut removes fins, tails, and skin, which are prized for their gelatinous qualities and not wasted. Every part of the ankou is treated with care to maximize flavor for the customer.

Ankou is also known for its unique diet, which includes everything from small fish and plankton to squid and even birds. It's this broad diet that results in the rich, creamy ankou liver that seafood lovers celebrate.
