Introducing GREEN DOLCE: A Sustainable Dessert Brand Turning Food Waste into Gourmet Treats

Embracing Sustainability: GREEN DOLCE Turns Waste into Gourmet Sweets

On May 22nd at 10:00 AM, the innovative dessert brand GREEN DOLCE will debut, brought to you by the socially responsible company Kuradashi Inc. Based in Tokyo, Kuradashi has dedicated itself to reducing food waste and promoting sustainability through delicious baked goods inspired by 'hidden food loss' materials, namely ingredients that are often overlooked despite being perfectly edible. This limited-edition baked goods set is available exclusively via their website, featuring a selection of unique creations crafted by award-winning pastry chefs.

The Power of GREEN DOLCE

The mission of Kuradashi revolves around remaining a social good company that tackles significant societal issues, with environmental sustainability at the forefront. In Japan, food waste totals approximately 17.6 million tons annually, with a staggering portion classified as 'hidden food loss,' which includes components of food that, although still good for consumption, end up being discarded. Herein lies the essence of GREEN DOLCE, birthed from the organization's project, THE GREEN TABLE, which revolves around identifying and using surplus raw ingredients to make delectable desserts.

The Delicious Products

Launching with two varieties, the GREEN DOLCE baked goods set (each with five pieces) will be on sale starting May 22nd. The offerings are specially designed employing previously wasted aspects of food, such as sake lees and wine sediment.
The collaboration for this product development includes renowned chefs Shohei Tanaka from the Japanese tea-centered restaurant VERT and Midori Matsuda from the confectionery brand amazoonia. Together, they have reimagined waste into culinary delights:

  • - Set 1 - VERT Collaboration:
1. Sake Lees and Matcha Financier - A delightful financier that blends the fragrant aroma of sake lees with premium matcha tea.
2. Sweet Potato and Coffee American Cookies - Rich in sweet potato puree, these cookies present a subtle sweetness complemented by coffee powder.

  • - Set 2 - amazoonia Collaboration:
1. Wine Sediment and Fig Financier - An innovative financier baked with wine sediment and semi-dried figs, offering a fruity finish.
2. Sesame Okara Financier - Combining savory sesame okara into both the main batter and topping, this financier boasts a delightful roasted aroma.
3. Sesame and Coffee Florentine - A crunchy treat with the rich depths of sesame and coffee-based nougat.

Collaborators' Insights

The chefs involved share their experiences regarding the importance of addressing food waste:
  • - Shohei Tanaka expressed how enlightening it was to recognize the potential of unused ingredients, reflecting on their experiences in the kitchen where food often ends up wasted.
  • - Midori Matsuda found great joy in the direct impact of using unused ingredients on food wastage while discovering exciting new textures and flavors.

A Vision for the Future

Kuradashi continues to strengthen its role as a social good company, collaborating with various food specialists and businesses under the umbrella of projects like THE GREEN TABLE. Kuradashi aims to contribute to a sustainable society through innovation and the strategic repurposing of ingredients that would otherwise be discarded.
