Zundouya's New Summer Ramen: A Delicious Fusion of Flavors

Last summer, Zundouya, a renowned ramen restaurant chain from Himeji with over 10 years of history, achieved a remarkable milestone by serving around 140,000 chilled ramen bowls in just two and a half months. This summer, they are introducing a new product – the 'Chilled Zundouya Ramen', made with a rich broth of pork and seafood combined with custom-made, high-moisture noodles for an exceptional taste experience. Set to launch on July 1, 2025, this limited-time offering will be available at all Zundouya branches nationwide, alongside a special beef ramen - 'Wagyu Roast Beef Ramen' - starting July 15, exclusively at the Shinjuku Kabukicho and Souemoncho branches.

The story of Zundouya began on April 4, 2002, in Himeji, Hyogo Prefecture, which has now grown to 106 stores in Japan and four in Shanghai, China (as of June 27, 2025). This beloved establishment can serve over 800 guests in a single day, demonstrating its popularity. The fresh 'Chilled Zundouya Ramen' is distinguished by its double broth of pork and seafood, known as buta chintan, which is delicately simmered to a clear, flavorful base. The broth is created by slowly boiling pork bones, trotters, and skins, and enhancing its depth with kelp, onions, and dried shiitake mushrooms.

To enhance the umami experience, a unique blend of five types of fish (sardines, mackerel, skipjack, bonito, and dried flying fish) is added, culminating in a rich, complex flavor. A touch of soy sauce accentuates the broth, making it irresistible until the last drop. To accompany this broth, Zundouya developed high-moisture, homemade noodles that are smooth and chewy, creating the perfect combination when paired with the chilled broth.

Additionally, the ramen is garnished with tender, low-temperature cooked pork shoulder chashu, tangy pickled red cabbage for a pop of color, and a piece of house-made grilled menma. These toppings are thoughtfully chosen to complement the overall flavor profile and keep the dining experience exciting to the last bite.
