In the heart of Nagano's breathtaking Tateshina Highlands, Hotel de L'alpage invites you to a remarkable event—the third installment of the "Sweets Week" featuring the exquisite creations of renowned pastry chef, Shoko Hirase. Following successful events in May and August 2025, this dessert extravaganza will take place from November 8 to November 16, 2025, allowing guests to savor the rich flavors of autumn, including chestnuts, apples, and pumpkins.

Chef Hirase, whose talent shone at the Michelin-starred Restaurant L’aube in Roppongi, will be showcasing a range of delightful desserts that embody the essence of Japan's vibrant fall harvest. Each dish is thoughtfully crafted to highlight seasonal ingredients and tantalize the senses, whether you’re enjoying a dessert during lunch or a special afternoon café time.

On the first day of the event, Chef Hirase will personally greet guests, adding an exclusive touch to the experience.

  • - Mont Blanc – Autumn’s Dual Layer Delight:
This luxurious adult's Mont Blanc is crafted using locally sourced chestnut paste. It features a rich chocolate layer topped with a smooth diplomat cream and a butterscotch ice cream, carefully presented with a cognac-infused chestnut paste. Garnished with balsamic chocolate sauce and a crispy chestnut-flavored financier, this dessert is a stunning harmony of sweetness, saltiness, and acidity.

  • - Fondant Potiron:
A warm dessert spotlighting Nagano's pumpkins, this dish features a molten center filled with white chocolate and pumpkin sauce, paired beautifully with Earl Grey ice cream and spiced cream. A warm treat that delights with every bite.

  • - Pom Rouge:
Highlighting the sweetness of Nagano apples, this jewel-like dessert layers caramelized Tarte Tatin with cinnamon ice cream and almond rocher, topped with a red wine and apple juice gel sheet, creating a delightful and visually stunning dish.

About Chef Shoko Hirase


Chef Hirase hails from Kumamoto and honed her skills at esteemed patisseries in Paris, including the iconic "Stohrer" and the Eiffel Tower's "Jules Verne." After returning to Japan, she became the head pastry chef at top venues and founded Restaurant L’aube in 2016 with Chef Imamura. Awarded the Gault & Millau Best Pastry Chef in 2020, her talent was also featured in the documentary "Jounetsu Tairiku" in 2022.
