Iwai elaborated on how their products are made solely from potatoes, oil, and salt, emphasizing the importance of sourcing high-quality ingredients. He shared how they routinely check the state of the potatoes sourced from different regions across Japan throughout the year, meticulously adjusting the frying oil temperature and mixture ratios to achieve a consistent and delectable taste. Next, Takuro Ajisaka from Takayama Co., based in Taitō, Tokyo, presented their unique 'Domestic Wheat Castella.' Participants were involved in developing this product using domestically sourced wheat from JA Otofuke in Hokkaido, combined with concentrated milk from the Nokan region and eggs from a contract poultry farm in Yamagata. The castella is crafted without additives; the artisan technique of “泡切り” (a method for creating a moist texture) ensures a delightful eating experience. A repeat attendee exclaimed, “I’ve been enjoying this since childhood—it's simply delicious!”
Puffed Chocolate with Direct Rice
Daisuke Suzuki from Mitsubishi Foods, based in Bunkyo, Tokyo, introduced the innovative 'Puffed Chocolate with Direct Rice.' This product was developed based on feedback collected from 1,500 users, showcasing a collaborative effort between producers and consumers. The puffed rice, made from organic brown rice sourced from JA Tsugaru Mirai, is enveloped in rich chocolate. Participants were impressed, with comments like, “I’ve never seen a puffed chocolate loaded with so much brown rice—this embodies the essence of Pal System!”
