Park Hyatt Chicago's renowned restaurant, NoMI, is set to launch the HERITAGE SERIES, an innovative and immersive exploration of global culinary traditions. This unique series aims to celebrate the enduring artistry found in various cultural practices, and its inaugural chapter centers on Japanese hospitality, featuring the age-old art of gyotaku, omakase dining, and the rich flavors of Japanese whisky.

The debut event will take place over two exclusive nights, October 16 and 17, 2026, with only 18 guests permitted per evening, promising an intimate and personalized dining experience. Executive Chef Terence Zubieta emphasizes that HERITAGE SERIES is crafted to engage guests beyond a simple meal; it aims to evoke curiosity and appreciation for the origins of culinary customs.

The spotlight of this inaugural event, titled Japanese Artistry, is a celebration of gyotaku—an ancient practice of capturing a fisherman's catch through intricate fish printing. Once merely a method for preserving the memory of a day's haul, gyotaku has transformed into a beloved art form. The distinguished contemporary artist Dwight Hwang will present this historic technique in a modern light, demonstrating live during the event.

As guests arrive, they will be welcomed with a Japanese-inspired cocktail reception before embarking on a six-course omakase experience. This curated meal culminates in the true essence of Japan's culinary heritage, showcasing the fascinating flavors and techniques that define it. An optional guided tasting led by Suntory Global Ambassador Davey Jones will introduce attendees to premium Japanese whiskies, further enhancing their cultural journey.

As attendees savor the expertly crafted dishes, they will have the rare chance to observe live gyotaku demonstrations by Hwang, who will create stunning prints from the seafood showcased throughout the evening’s omakase course. This direct interaction not only reinforces the connection between food and art but also allows guests to take home a hand-signed print—a lasting reminder of their experience.
