Tsunana Brewing at Sustainable Food Showcase vol.7
Tsunana Brewing Company, located in the heavy snowfall region of Tsunan, Niigata Prefecture, recently took part in the
Sustainable Food Showcase vol.7 held on July 10, 2025, at the
Sustainable Food Museum in Nishi-Shinbashi, Tokyo. The event was characterized by its theme, "The Potential of Fermentation and Food through Tradition and Advanced Technology."
The company's representative, Kengo Suzuki, participated in a panel discussion that accentuated the significance of the unique fermentation culture inherent to the snowy region of Tsunan. During the discourse, Suzuki emphasized that merely being beneficial for the environment and the community is not enough for a business to thrive; it is crucial to convey concrete value to customers. He proposed that the integration of sustainability with customer merits is essential for the advancement of fermentation and food culture in the future.
At the showcase, Tsunana Brewing presented its signature sake,
GO GRANDCLASS Uonuma Koshihikari Edition, renowned for its fresh and clean taste resulting from unique yeast and super low-temperature triple fermentation processes. This exceptional product was awarded a gold medal in the Kura Master 2024 competition. Alongside, they introduced a palatable sake lees gelato and offered tastings of a sake lees pound cake developed as part of their sake upcycling project, garnering positive feedback from the attendees.
Alongside Tsunana's offerings, various food tech items sparked interest, such as fried potatoes flavored with
Umamo from AlgaleX, which harnesses flavors from algae, and
CRUST BREAKING BREAD ALE, a craft beer from CRUST JAPAN aimed at reducing food waste. Both innovations greatly captured the attention of participants.
