Starting September 25, 2025, SAAWAAN BISTRO located on the third floor of Azabudai Hills plans to introduce an exciting new dining concept featuring a pairing of aromatic Thai cocktails and tapas. This innovative approach seeks to redefine traditional meal pairings by integrating cocktails not just as drinks, but as integral components of the dining experience. With an emphasis on bold flavors and spices, each cocktail works in harmony with a specific dish, offering a novel perspective on Thai cuisine that diners may have never encountered before.

SAAWAAN BISTRO aims to create a vibrant connection between the cocktail and the accompanying dish, allowing guests to experience the nuances of Thai flavors through aroma and spice that linger on the palate. 1. BB.T (BB Tea) × Chiang Mai Sausage


This refreshing cocktail is a Thai-style Bloody Mary made with Mekhong whiskey as its base, complemented by tomato juice and lime. The richness of this drink is enhanced with the addition of Worcestershire sauce and Tabasco, alongside fresh basil and black pepper that enhance the flavors. When paired with Chiang Mai sausage, the combination brings a delightful contrast of smokiness and spice reminiscent of a bustling Thai street market atmosphere.

2. Chai Fashioned × Cinnamon Dates


A warm, inviting drink that combines chai-infused Mekhong with maple syrup, the Chai Fashioned cocktail can be further enriched with coconut milk for additional smoothness and a tropical flair. Spearheaded by Chef EARTH and Chef Patissier PAPER, the flagship restaurant reinterprets the culinary traditions lost during the Ayutthaya Dynasty, pursuing a perfect balance of flavors that has captivated food enthusiasts worldwide.

Executive Chef EARTH


After graduating from Le Cordon Bleu, Chef EARTH began his career at the two-Michelin-star Mezzaluna. He then served as Executive Chef at Nitan in Phuket and was awarded Best Chef of Thailand by Tatler Thailand in 2020. He has been featured in the Michelin Guide and won Iron Chef Thailand. Currently, he leads the kitchen at SAAWAAN.

Pastry Chef PAPER


After honing her craft at renowned establishments such as Sadaharu Aoki in Paris and various acclaimed patisseries in Brussels, Chef PAPER returned to Thailand in 2011. Following her tenure as Executive Pastry Chef at Issaya Siamese Club, she established Issaya La Pastry in 2015. In 2018, she became the first Thai to be invited to the Ladies World Pastry Championship, and her dessert salon ICI has rapidly gained acclaim as a groundbreaking destination for Thai sweets since its opening in 2019.
