A Culinary Journey at Japanese Restaurant WA
At the heart of MUJI HOTEL GINZA lies the esteemed
Japanese Restaurant WA, a destination where culinary artistry meets the rich flavors of Japan. From December 5, 2025, this innovative restaurant will launch its latest endeavor, the
Fukushima Ozen, showcasing an array of GAP-certified ingredients sourced from Fukushima prefecture.
WA is part of the
“WA Discover Food” initiative that emphasizes the importance of using exceptional ingredients handpicked by the chefs from various regions in Japan. This concept not only highlights the freshness and quality of the ingredients but also tells the unique stories behind each item. Previously, WA delighted guests with a
Kochi Ozen, featuring high-quality sashimi and citrus fruits from Kochi, which received an enthusiastic welcome from food lovers. Now, the Fukushina Ozen promises to captivate diners with its selection of local dishes.
The Essence of Fukushima Ozen
What makes the
Fukushima Ozen truly special is the commitment to sustainable farming practices, as evidenced by the ingredients being GAP certified. This includes succulent
Kawamata Shamo chicken, mushrooms, tomatoes, and rice, all cultivated under strict standards that ensure quality and safety.
Highlight Dish: Kawamata Shamo Sukiyaki
One of the standout offerings is the
Kawamata Shamo Sukiyaki. Raised in Kawamata Town, this chicken is revered for its robust texture and deep umami flavor due to its unique rearing conditions. With a meticulous cooking method, the chef brings out the meat's natural sweetness by preparing it in a delicate, sweet sauce. Served with seasonal vegetables and fresh egg, this dish is a celebration of authentic flavors that promises to leave a lasting impression.
Tempura Trio
In addition to the Kawamata Shamo, the menu features a delightful
tempura platter that includes
meghikari,
jumbo nameko mushrooms, and
shiitake mushrooms.
Meghikari, a deep-sea fish, is known for its rich taste and fluffy texture, making it an excellent choice for tempura. The
jumbo nameko provides a firm bite and has been cultivated by local farms, ensuring a premium experience. The shiitake mushrooms, raised in the pristine highlands of Tamura City, boast a meaty and curvy appearance, highlighting the care and quality in their growth.
A Fresh Take on Tradition
Completing the course, the
Sunshine Tomato Salad offers a refreshing touch. These
GAP-certified tomatoes cultivated hydroponically provide a sweet and mild flavor. They're paired with a delicate broth made from local seaweed and accompanied by dried shirasu, giving the dish a hint of the ocean's fragrance.
To pair with the savory dishes, the restaurant offers rice made from the brand “
Fuku Warai,” a product intricately developed over 14 years by local farmers in Fukushima. This rice symbolizes the joy of farming and eating, creating a delightful experience for the patrons.
Sweet Finale: Apple Crème Brûlée
For dessert, indulge in an exquisite
apple crème brûlée made with apples from Shirai Farm, known for their
FGAP certification. The apples are incorporated into the brûlée mixture and caramelized to perfection, offering a crispy top along with a sweet, refreshing filling. Throughout the season, guests can expect to taste different varieties, including the juicy and crunchy
Sun Fuji and the well-balanced
Beniko Haku, ensuring each visit brings a fresh delight.
