Date Shoten Brings 200-Year-Old Fermentation Craft to Tokyo with New Ramen Shop

Date Shoten Opening in Tokyo

On May 25, 2026, Kagoshima's renowned Date Shoten will open its first ramen shop in Tokyo, specifically in the Chiyoda area at Kanda. Known for its exceptional fermentation techniques developed over 200 years, Date Shoten is an exciting new addition to the bustling dining scene of Tokyo.

Background: Demand Fuels Expansion

Established in Kirishima City, Kagoshima, Date Brewing has maintained its traditions in brewing for over two centuries. Since the opening of Date Shoten in November 2025, the ramen shop has gained national recognition, thanks in part to social media and word-of-mouth. Customers have been clamoring for a Tokyo location to experience the unique flavors that have become a staple in Kagoshima.

Particularly popular is their additive-free, fermented broth made from black vinegar, miso, and soy sauce, products of Date Brewing's craftsmanship. With a focus on flavor, the ramen has captivated not just aficionados but also diners prioritizing health and safety. As demand surged, the decision for a Tokyo outlet became inevitable, and thus the grand opening date was set.

Store Concept: A Space You’ll Want to Return To

With the slogan, “A place you want to visit and return to,” the Tokyo shop will embrace a modern Japanese aesthetic amidst the urban hustle. Unlike the cozy atmosphere of the Kagoshima flagship, which is set in a renovated traditional house with a view of Sakurajima, the Awajicho location will exude a warm yet contemporary ambiance, inviting customers to take a break from their daily grind.

The staff, predominantly from the younger generation, are passionate about sharing the cultural significance of fermentation and the flavors of Kagoshima. Their mission is to bring a taste of Kagoshima to Tokyo, making the ramen shop a blend of tradition and youthful energy.

Menu Highlights: Top Three Offerings

Date Shoten will feature three signature dishes that have won the hearts of loyal customers back in Kagoshima:

Kaku I Shoyu Ramen

This soy sauce ramen features a light yet flavorful chicken broth, beautifully complemented by Date Brewing's famous sweet soy sauce, Kanro. It's a popular morning choice back in Kagoshima as well. Price: ¥1,100 (tax included).

Kaku I Miso Ramen

A rich miso ramen made with abundant amounts of Date Brewing's beloved barley miso, known for its gentle sweetness and deep flavor. Regulars frequently return for this dish. Price: ¥1,100 (tax included).

Black Vinegar Tantan Mixed Noodles

Inspired by the traditional pottery used in making Date Brewing's rice vinegar, this tantan noodle dish is rich in flavor. The umami of black vinegar combined with fragrant toppings creates a unique blend that intrigues customers. This dish has also become a local specialty in Fukuyama Town. Price: ¥1,150 (tax included).

Seasonal limited time dishes may also be added to the menu.

Future Prospects

The Awajicho location serves as a stepping stone for Date Brewing to enhance recognition in urban areas and promote fermentation culture. Plans include:
  • - Development of souvenir ramen and gift products with nationwide shipping availability.
  • - Promotion of fermentation lifestyle and Kagoshima culinary heritage through social media and events.
  • - Consideration for further expansion in metro areas.
