Lasarte, Osteria Francescana, and PAZ Among Awarded Restaurants at the BPR

Lasarte, Osteria Francescana, and PAZ Recognized in New Culinary Award

The Culinary Institute of Barcelona (CIB) has made significant waves in the culinary landscape by hosting the second edition of the international Best Practices Recognition Award (BPR). This prestigious event took place at the Gastronomic Forum in Barcelona, showcasing a select group of restaurants that excel not only in culinary excellence but also in fostering effective learning environments within their kitchens.

Among this year's honorees are renowned establishments such as Lasarte from Barcelona, Osteria Francescana from Modena, Italy, and PAZ from Tórshavn, Faroe Islands. Each of these restaurants was recognized for their innovative approaches to culinary arts and their commitment to best practices in training and team management. The award underscores the places that champion high culinary standards while nurturing new talent in the kitchen.

In its inaugural edition, the BPR recognized establishments like Berbena and Pompa, both hailing from Barcelona, setting a high bar for future contenders. This edition expanded its reach further by including eight new distinguished recipients. What sets the BPR apart from traditional culinary awards is its focus on how restaurants organize their operations and team dynamics, which is often overlooked in awards prioritizing culinary output alone.

Ona Mundó, the Academic Director of CIB, notes that awards like these are pivotal for highlighting what it truly means to achieve culinary excellence in modern dining experiences. "By recognizing those who perform well even when they are not under scrutiny, we broaden the definition of what gastronomic excellence entails today," she articulates. The BPR aims to take a holistic view of excellence in restaurant management and operations.

The selection process for BPR restaurants involves rigorous standards. Only those establishments that have a specific internship collaboration with CIB and provide at least 1,040 hours of student mentorship are eligible for consideration. The evaluation criteria encompass various aspects, including the quality of the work environment, adherence to stated values, team-building capabilities, and the creation of meaningful learning opportunities. Mundó summarizes these standards under the term “good practices.”

The evaluation panel comprises faculty from CIB, which plays an essential role in the selection process. From assessing working conditions to the transmission of both artisan and professional knowledge, the committee evaluates each partner restaurant comprehensively. Currently, CIB collaborates with over 200 establishments across more than 25 countries.

The award ceremony turned celebratory as representatives from not only the awarded restaurants but also the CIB team gathered to commemorate shared culinary journeys and achievements. Further highlighting its prominence in the sector, CIB was also recognized by the Slow Food Guide as a leading educational institution in sustainable gastronomy, marking it as the first culinary school to enter the “Selective Affinities” of the guide.

For those interested in the culinary education landscape, CIB stands out as a beacon. Established in 2017, CIB offers various culinary and management programs catering to aspiring chefs worldwide. The school was founded with a vision focused on creativity and innovation, responding to the demands of 21st-century culinary arts.

With courses designed to bean on practical experience, students are encouraged to develop their cognitive abilities and entrepreneurial mindsets while fostering leadership through confidence-based management. “More than 85% of our students come from abroad, representing every continent,” highlighting its global appeal and impact.

CIB also extends its offerings through programs like openCIB, providing creative and innovative training to external organizations. Esteemed institutions including Stanford University and prominent agencies participate in workshops designed and led by CIB staff, extending its influence beyond culinary education.

In conclusion, the recognition bestowed upon Lasarte, Osteria Francescana, and PAZ through the BPR affirms the importance of combining culinary arts with mindful organizational practices. As the culinary world evolves, awards that honor such comprehensive standards will continue to lead the way in shaping the future of high cuisine and educational excellence in the culinary industry.
