Shangri-La Tokyo, located in the heart of Marunouchi, Chiyoda, offers a delightful culinary surprise with the special Edomae chirashi sushi featuring a poke-inspired twist. This dish, created by the skilled sushi chef Ryohei Sato, is exclusively available as part of the seasonal lunch menu from July 10th to August 31st, 2026, at the renowned Japanese restaurant Nadaman.

Chef Ryohei Sato, who has a deep-rooted connection with the culinary arts stemming from his experiences on Hawaii Island, has blended the essence of poke into the traditional Edomae sushi. Upon returning to Japan, he honed his skills in Ishinomaki, Miyagi Prefecture, and further developed his expertise at Ginza Onodera in Tokyo, where he also contributed to the training of aspiring sushi chefs. Since May 2026, he has been a pivotal member of Shangri-La Tokyo's Nadaman team.

This innovative Edomae chirashi sushi not only incorporates seasonal seafood and traditional ingredients but also reflects Chef Sato's journey and passion for culinary arts. The dish features carefully selected toppings, including anago (sea eel), kuruma ebi (sweet shrimp), kohada (young sardine), tamagoyaki (Japanese omelette), kanpyo (dried gourd strips), and cucumber. While it retains the traditional appearance of Edomae chirashi sushi, each bite reveals the delicate fragrance of sesame oil, subtly mingling with the Hawaiian influence, creating a harmonious and approachable taste that captures the essence of both cultures.
